Knotweed honey is a Fall variety. It has a dark red color when harvested, and turns creamy as it crystallizes.
Japanese Knotweed is a close relative of buckwheat and its honey has a sharp dominant flavor and distinct aroma.

Dark-colored honey is known for its medicinal properties, it helps fight colds and viruses and has high levels of antioxidants

Raw honey will crystallize naturally over time. If you wish to re-liquify simply place the open jar in a bowl of warm water.
