Raw comb honey is the most natural form of honey straight from the beehive.
* Honeycombs from the Spring and summer harvest are light in color and have a mild, sweet flavor
*Honeycombs from the fall harvest have a typical dark color honey with a bold, dominant flavor.
Fall honey in our region includes Japanese knotweed, goldenrod, and asters
Comb honey pairs well with cheese, fruit, and more. To eat it, you can cut a piece with a knife and chew the honeycomb, like gum. You can then discard the leftover wax or eat it, which is completely safe.
Note that the raw honey in the comb cells can crystallize over time, so it is best to eat the comb honey quickly, but if the honey does crystallize, it is not spoiled and can be eaten safely.
Each honeycomb weighs between 3-4+ lbs, and the entire wooden frame is filled end-to-end with honeycomb built by our honeybees.

Gil’s Honey is a third-generation of beekeepers.
We are located in the beautiful Finger Lakes region of New York, in organic farms and state forests.
We are proud to produce raw artisan honey, unheated and unfiltered, preserving the natural pollen, enzymes, and micronutrients.
Our honey varieties are separated by season and location, so the honey you get comes straight from the honeycombs, with the unique flavors and aroma of each flower nectar captured in the jar.
Raw honey will crystallize naturally over time. If you wish to re-liquify, simply place the open jar in a bowl of warm water.
